What is food safety?

Food safety means following best practices when receiving, storing, handling, preparing, and serving food to minimise the risk of food-borne illness.

Food safety refers to the practices that protect food from contamination throughout the supply chain β€” from receiving and storing through to preparing and serving β€” so that the people eating it don't get sick.

Key principles of food safety include:

  • Cleaning and sanitising equipment, surfaces, and utensils

  • Personal hygiene, including correct handwashing and appropriate work clothing

  • Temperature control during storage, cooking, and display

  • Pest management

  • Understanding food allergens and intolerances

Anyone working with food in Australia is required by law (Food Standard 3.2.2A) to be trained in safe food handling practices appropriate to their role.
